Grilled African Fish

This fish recipe is grilled hot while it is basted in a lightly flavored marinade.

Cook Time: 10 minutes
Total Time: 25 minutes

Ingredients:

• 2 pounds fresh fish fillets
• 1 cup vegetable oil
• 1 small onion, chopped
• 1 bell pepper, chopped
• juice of 1 lemon
• 1 tablespoon vinegar
• 2 teaspoons cayenne or red pepper flakes
• 1 teaspoon salt

Combine all ingredients except for the fish fillets. Mix well until the salt is dissolved. Place fish fillets in a glass dish and cover with marinade. Turn to coat and set aside for 20 minutes. Preheat grill. Pour marinade into a saucepan and bring to a boil. Allow to cool. Grill fish fillets over medium high heat for about 4 to 5 minutes per side or until the fish flakes easily and has an even appearance all the way through. Serve by pouring a small amount of the sauce over the fish fillets.
