Jalapeno Duck:
Ingredients:
12 Duck Breasts (6 Ducks)
6 large Jalapenos
enough Pepper Bacon to wrap breasts
Mesquite Marinate
1 package of McCormick's 3 Cheese Chicken Sauce Mix
Velveeta Cheese
Cut the breast out of ducks and butterfly. Take hole jalapeno, slice in half long ways, clean out seeds take a jalapeno halve and insert in each butter flied breast, then wrap with Pepper Bacon.
Take "Mesquite Marinate and top breast with it. Cook at 350 degrees for about 30 minutes. Take out and drain grease, and put back in. Leave enough drippings and spoon over breast so as to keep them from drying out. Cook for another 30 minutes or so.
In a small pot, mix 1 package of McCormick's 3 Cheese Chicken Sauce with milk, simmer till extra thick, and add some Velveeta cheese to make it even thicker.
Take duck out when done, drain all grease,. pour cheese sauce all over the duck breast and serve HOT. Serve with hot potato salad, etc.
Really good stuff. 12 breasts won't last long.
