In a medium bowl, mix sour cream, cream cheese, lime juice, lime zest, mustard, salt, and pepper until smooth. Spread the lime/mustard mixture evenly on both sides of the Redfish. Place Redfish in the fridge and allow it to sit for about 30 minutes. Preheat grill to medium-low and grease the grill or grill grate. When the grill is heated, grill your Redfish 3-4 minutes per side or until Redfish reaches desired temperature.
